since i wasn’t feeling 100% last night (and already fed my craving for soup at lunch), i really wanted some comfort food for dinner. after surveying the ingredients in my kitchen, i decided to make spaghetti and meatballs. i used this recipe, but i did get a little lazy because i used store-bought marinara sauce (i love Publix’s Tomato-Basil).
use fresh ingredients when possible. especially when it comes to herbs.
when you roll them, they don’t have to be perfect–they will become misshapen when you cook them anyway
layer meatballs, sauce, fresh mozzarella, and a bit of olive oil and bake.
scoop and serve over freshly cooked pasta (i used whole wheat spaghetti noodles)-enjoy!
