cream cheese cookies

after a busy weekend, there is nothing more therapeutic to me than being in the kitchen… especially when i’m baking. so i flipped though some cookbooks for some inspiration and found a recipe that i tweaked a little. i think i found my go to cookies recipe:

always cube ingredients you need to soften quickly

no need to sift the flour and sugar

you can use any nut you like--and i used semi-sweet and regular chocolate chips

beat everything except the chocolate and nuts

roll chocolate chips and nuts into the dough-about 1 1/2 inch round balls

take them out when they are puffed and lightly browned


recipe makes between 12-15 small cookies

preheat oven to 350 degrees

4 oz of softened cream cheese (half of a container or bar)

8 tablespoons of softened butter

1 cup all-purpose flour

1/4 cup of sugar

1/2 tablespoon vanilla extract

about a half cup of whatever nut or chocolate chip you would like to used (i used  semi-sweet & milk chocolate chips mixed together and sliced almonds).

mix cream cheese, butter, and vanilla extract. add in sugar and flour and mix until blended. roll dough and nuts and/or chocolate chips into small balls and placed on ungreased cookie sheet (so much better in recipe-no need to grease).

bake for 12-15 mins or until lightly browned
